After their 9 yr old son Francesco was diagnosed with Type 1 Diabetes, Celiac Disease, and Juvenille Hashimotos Disease in October 2011, Gina and Frank tried to make sense out of it all. It took some time and a tremendous amount of patience to accept, understand, and learn how to best care for him. Anyone that has had to deal with such a diagnosis can surely understand the impact it can have not only on the life of the child but on the entire family as well. Gina, having been diagnosed with Hashimotos Disease 13 years ago, and Celiac Disease 3 years ago, knew first hand the sacrifices her son would have to make to ensure living a gluten free lifestyle.

 Adding Type 1 Diabetes to the equation complicated things tremendously. Insulin Dependent Diabetics need carbohydrates to ensure their blood sugar stays within a safe range. A low blood sugar requires a Type 1 Diabetic to typically reach for a quick acting carbohydrate to bring their blood sugar back to a safe level. That is not so easy when you suffer from Celiac as well. Gluten Free carbs are becoming more accessible but suffering from Type 1 Diabetes and Celiac Disease together require a constant source of gluten free foods to be accessible at all times.
